Modern, inventive Michelin-starred haute cuisine, served only as a degustation set menu: the 5-course "Confluence" (€99, lunch only) or the full 8-course "Prairial" (€135). Expect local, seasonal produce, heavy on vegetables and seafood and light on meat, with amazing sauces often made from fermented ingredients. Reservations essential.
