  • EatSpanish restaurantValencia

    Paella

There are several versions of this tasteful rice dish: paella valenciana, with meat (chicken and/or rabbit usually), paella de marisco, with fish or seafood, or even paella mixta, with meat and fish at the same time, the least popular among locals. It is very difficult to say which is the 'real' paella, as every person has his/her own version (though no paella that deserves this name contains sausage, ham or meat broth, for instance). If you want to eat an authentic paella, try it at the Malvarrosa beach area; you will find there are several good restaurants. The authentic Valencian paella is made only with fresh ingredients, in a special iron pan and using a fire made with wood (not gas or electricity). Vegetarian paella is called paella vegetal or paella de verduras. Authentic paella can be rather dry, it's not a soup and shouldn't look like gumbo. Don't be shy about scraping the caramelized rice from the bottom of the pan, it's delicious!

    Sukiyabashi Jiro

    すきやばし次郎

This three Michelin star restaurant and its owner/chef, Jiro Ono, were immortalized in the 2011 documentary Jiro Dreams of Sushi. The highly expensive course is omakase only - Jiro himself selects 20 nigiri pieces daily based on that day's catch from the Tsukiji fish market. You are not expected to use soy sauce, as many pieces are already brushed with it. The restaurant only has ten counter seats, and due to its popularity, advance reservations are required by telephone in Japanese. While reservations open on the first day of every month for the following month's seating, they almost always sell out the same day. Reservations via a concierge (hotel, American Express, etc.) may be the best way for foreign visitors to secure a seat.

  • EatRestaurantSarajevo

    House of Spite

    Inat Kuca

The history of this restaurant dates back to the Austro-Hungarian occupation, when Sarajevo underwent large scale infrastructure projects which resulted in the post office, the National Museum, the Faculty of Law and many others. When the City Hall was to be constructed however, the Austro-Hungarians faced the stubbornness of an old Bosnian man named Benderija who lived in a house in that location. He refused to have his house demolished for the construction of the City Hall, and only after long negotiations he agreed to give up his property under 2 conditions: he wanted a bag of golden coins as compensation, and the house had to be moved brick by brick to the other side of the river. Since then, the building is known as the house of spite, and a symbol of Bosnian stubbornness and resistance against the government. In 1997, the house was converted to a lovely restaurant selling hearty stew-like meals and Bosnian specialities. A terrace offers a view over the river and the Sarajevo City Hall which it replaces. The house is decorated in oriental style, and worth visiting for the ambient alone.

    Chez Panisse

Chez Panisse is the origin of California Cuisine, and still is the best representation of the style that focuses on local produce in season. Fixed price menus downstairs ($175), which usually require a reservation a month in advance. It's worth it, though. The cafe upstairs offers more variety in à la carte form, and it's easier to get a table. Still, if your parents are paying, try to book downstairs.

If you want something other than pastrami, their corned beef and brisket vie for second best and even their turkey is fine (though it's probably not what you're there for); make sure to ask for anything "juicy" (i.e., fatty).
