Head to Confluence Park, just a short walk south of the museum. This is your spot for the sunset. The park faces north, offering a clear view of the horizon as the sun sets toward the WSW.

After the sun dips below the horizon, walk three minutes to R & B Chop House. It is open until 22:00, so you have plenty of time to enjoy a steak dinner in the dark.

Finish your evening at The Office, located inside the Hilton Garden Inn. It is just one minute from the restaurant. Since the bar has no listed closing time, it is a reliable spot to end the night.
Local tip
Check the museum hours before you go. On weekdays it opens at 12:00, but on weekends it opens at 10:00. Make sure you arrive before they close if you are visiting later in the week.
