Grab a drink at Uafas. It is just a short walk from the Capela dos Ossos, so you can kill time here before the main event. The café is open until late, so you have plenty of flexibility.

Walk six minutes north to Jardim das Casas Pintadas. This garden offers a quiet spot to wait for the light to change. The Capela dos Ossos is directly south of here, giving you a clear view of the direction the sun will take.

Watch the sunset. On 15 July, the sun sets at 20:55, heading WNW. The golden light starts around 20:16, so the garden will be bathed in warm light just before the sun dips below the horizon.

End your evening with dinner at Taberna de Santo Humberto. It is only a four-minute walk from the garden. Since it is July, they are open for the late service starting at 19:30, so you will have no trouble getting a table after the sunset.
Local tip
July evenings in Évora can stay warm late, but the shade in the gardens provides a welcome break from the day's heat. The late dinner service at the tavern is perfect for digesting your drink and enjoying the night air.
